Chardonnay from vines planted in 1986 on clay mixed with limestone. Farmed organically and hand-harvested, the grapes are de-stemmed, gently pressed, and fermented with native yeasts. Racked into oak barrels, 15% new, for one year, then transferred to stainless steel before bottling (à la Roulot).
Immensely expressive off the bat with lemon compote, jasmine flowers, raw hazelnuts and quinine on the nose. Surprisingly lithe on the palate: rich citrus and crisp apple notes balanced by cleansing acidity from the higher altitude. The wine's natural verve is matched perfectly by its weight. Incredible now with a thorough decant, but a few years in the cellar will reward the patient with a thought provoking experience.
