A blend based on Listán Negro with a touch of Listán Blanco and Negramoll. The organically-grown grapes are hand harvested and ferment with whole bunches in open top barrels. The wine is then racked into neutral french oak for a full year before bottled unfined and unfiltered.
This is a strikingly aromatic wine: pure and ethereal with cranberries and cherries subtly accented by herbal, umami-driven aromas of bay leaf, sandalwood, five spice and forest floor. All floating under classic, flinty volcanic notes. The simultaneously high-toned but earthy palate unfurls with more pure red fruit, blood orange and currant, contrasted perfectly with cassia cinnamon, dried hibiscus, and rock salt. Wonderful freshness frames everything perfectly, but the serious concentration and depth stand out above all else. Give this a long decant before enjoying now, or cellar a few if you can stand it, and reap the rewards of patience.
