DAY 1:    
We're starting this year's countdown with a serious and historic wine. I tasted a lot of wonderful Champagne this year, including many during my visit to the region this past February, but today's wine tops them all. This is the best Champagne I have tasted all year, and perhaps one of the best bottles of bubbly I have ever had. Period.

Today's offer came late to the line up, having only been brought in recently, but at first sip I knew we had our hands on something truly special. This vintage champagne from traditionalist Larmandier-Bernier is the total package: balancing biscuit-y richness with sensational acidity and transparent chalky minerals. A Blanc de Blancs in the truest sense of the style and a modern Champagne classic. A wine so good, I bought all that was made available to both North and South Carolina.

Larmandier-Bernier is a gem in champagne, a land studded with heaps of talent and quality. Their vineyard holdings are the crème de la crème of the Côte des Blancs, which include the grand cru villages of Vertus, Cramant, Oger and Avize.

Each cru is vinified separately, using indigenous yeast and aged in old barrels before being bottled for secondary fermentation. The wines stand out for their purity and underlying energy derived from the chalky mineral soils. Emerging from their deep cellar with picture-perfect balance, surging right out of the gate, while possessing all of the inherent precision to age gracefully for decades.
100% biodynamically grown Chardonnay from two parcels located mid-slope in the village of Vertus. The soils are a combination of limestone and chalk and the wine was vinified in a combination of stainless steel, large barrels and barrique. Zero dosage (sugar) was added after disgorging, creating a focused, dry and balanced Champagne.  

A quintessential Blanc de Blancs nose of lemon, green apple, pastry cream, lime blossom, ginger and oyster shell. The palate is profound and cuts like a knife, displaying chalky minerals, taut acidity and savory citrus. A refined and deep Champagne.
