This wine a true original. It's a collaboration from two of the greatest minds in wine today, a realized vision of Rajat Parr and Spain's trailblazing wine collective, Envínate. Comprised mostly of Mencia from Envínate’s Camiño Novo vineyard in Ribeira Sacra (Envínate fans take note!), which Rajat personally grafted to rootstock on his farm in Cambria, California. A perfect amalgamation of two terroirs, and a true stoke of winemaking genius. 

This is the first release from Rajat's newest project: Phelan Farm, a regenerative farm on California's wet and cool Central Coast, mere miles from the Pacific. Here he has set out to once again reimagine what American wine can be, and today's wine is proof that he is onto something magical. A domestic wine like no other, combining the restrained dark spice of Spanish Mencia with a touch of exuberant, downright delicious California sun-kissed fruit.

This is a wine unlike anything I've ever tried, and yet it echos many of the greatest wines of France and Spain alike.

Sommelier and American wine legend Rajat Parr needs little introduction. Having started out in hospitality, he attended the Culinary Institue of America before going on to work under Larry Stone at Rubicon in San Francisco. Here he honed his skills as a sommelier, and after a stint at several of the top restaurants in California, he made the jump to winemaking.

Today, Raj is an integral figurehead in the now legendary wineries of SandhiEvening Land and Domaine de la Côte. He prioritizes organic and biodynamic farming methods and minimal intervention practices in the cellar. Phelan Farm is perhaps his most daring endeavor, with zero sulfur, indigenous yeasts, and a synthesis of farming techniques, including organics, biodynamics, regenerative and sustainable methods. The wines are testaments to a lifetime spent in wine and Raj's incredible dedication to California. 
Comprised of Mencia with Trousseau and Palomino rounding out the blend. The grapes are hand-harvested and co-fermented using indigenous yeast in stainless steel. The wine is then pressed and aged in 500L used, French oak barrels before being bottled unfined and unfiltered.     

Super fresh and vibrant with tart red cherry, raspberry, pomegranate and a touch of pink peppercorn on the nose. The lively aromas translate to the palate where crunchy fruit is wrapped around a core of saline minerality and elegant floral notes. A vital wine and significant wine.
