100% Cabernet Franc from organically farmed vines planted in the estate's Home Farm Vineyard. The grapes are hand-harvested, de-stemmed and fermented with indigenous yeasts in neutral oak vats. After fermentation, the wine ages in a mixture of foudre, demi-muids and barrique for a total of 18 months before bottling without fining or filtering.
A sultry, silky expression of Cabernet Franc, with blackberries, black cherries, violets and an earthy, minty edge. The palate is stacked with layers of dense black fruit, tobacco notes and peppercorn. Finishing with a sapid, savory flourish and cleansing acidity. A wine to cement Canada on the fine wine map.
