100% Chenin Blanc grown in Montlouis-sur-Loire, an appellation located directly across the river from Vouvray, including a parcel of 70-100 year-old vines planted on pure tuffeau. A very dense limestone soil unique to this area of the Loire. The organically farmed grapes are hand-harvested and fermented with native yeasts in a combination of neutral oak, fiberglass and stainless steel tanks. Then aged for 12 months in used barrique before bottling and release.
A wine of extreme purity. The nose is crystalline, with crisp green pear, lemon, crushed rocks and a touch of spice. The palate is electric, with finely etched flavors of citrus, orchard fruits and saline minerals. It walks a tightrope of tensity, delivering fresh fruit with palate-cleansing acidity. A wine bursting with energy, it's an absolute thrill to drink. I love it as an aperitif, but it really shines as a foil to fresh, flaky white fish.
