It hits me right around this time every summer, rosé fatigue. Don't get me wrong, I love rosé, and always get excited when fresh vintages are released in the spring. But about halfway through July, I've had my fill.

Enter today's wine, which couldn't have arrived at a more opportune time. A Chilean País that's abundantly fresh and thirst-quenching. A jubilant red bursting with juicy, crunchy fruits grounded by savory peppery spice and a streak of exhilarating, bright acidity. It's a red wine that's as refreshing with a chill as any white or rosé, and light-years more interesting.

100% País grown 161 meters above-sea-level on decomposed granite soils. The 150 year-old vines are planted on original root-stocks and have never been grafted! After manual harvest, the grapes are de-stemmed, crushed and fermented in stainless steel tanks. Aged for 10 months in steel, then bottled un-fined and unfiltered.

Lithe and alive, the nose is bursting with juicy cherries, raspberries, crushed rose petals, rosemary, sage, and a pop of pink peppercorn. The palate is a perfectly balanced array of fruit and savory: spice and herbal notes matched by seriously fresh berry fruits and supportive tannins. A wine made for burgers or char grilled veggies. 
Ignacio Pino Román is dedicated to tradition in Itata. A native of Chile, Ignacio started as an agronomist and moved into wine by working in wineries the world over. His work in Itata focuses exclusively on self-sustaining vineyards, places where the vines thrive naturally without irrigation or chemical intervention. With a bounty of old vine parcels, Ignacio prefers varieties that are older and more traditional, such as País, Semillon and Muscat of Alexandria, as these grapes were some of the first in Chile and the Americas. 

His work in the cellar is equally minimal, eschewing new oak. He prefers stainless steel, clay amphora and old barrels, as he says they preserve the true character of these ancient grapes.
