I began learning about wine in a classroom setting. Each day, the professor would pour dozens of mysterious liquids into our glasses with the faint hope that we would correctly determine the wine upon tasting it, blindly. While this was helpful in learning about grapes and regions, I often found myself feeling quite indifferent when it came to how most of the conventional wines tasted – everything changed when he poured us a glass Alice and Olivier De Moor's Chablis.
What separated De Moor's wine from the others poured in class? It had a vivacious, linear quality I later learned come from limestone bedrock on which these grapes were grown. It was pure, reflective of the unique part of Burgundy it came from. It was full of life.

Alice and Olivier De Moor are two humble growers who's journey began in 1989, when they planted three plots of vines in Chablis. It's a different world compared to other parts of Burgundy, closer to Champagne than the rest of the region, further south. These chalk-laden soils were formed millions of years ago in a warm, shallow sea – the limestone is expectedly rich in ancient fossils, including oysters and urchins.
Alice and Olivier work organically with individual small plots and a hands-off approach in the cellar (unlike many Chablis producers, where machine harvesting reigns). The purity, life and complexity in each of their wines is unmatched. These wines are rare and hard to come by. Monarch is over the moon to offer three De Moor bottlings.
Chablis 'Coteau de Rosette' 2017 $54.99: One of De Moor's top bottlings. The grapes are sourced from a limestone-rich hillside, studded with clay. Dense and concentrated, while still holding onto undeniable freshness from the high acidity. The finish lasts a lifetime. The truest essense of this exalted terroir.
Bourgogne Aligoté 2017 $34.99: Aligoté is Burgundy's other white grape. Delicate and focused, yet packed with mid-palate mineral density. Flavors of orange blossom and lemon meringue mingle with a savory, energetic finish. An absolute Burgundian bargain!
Vendangeur Masqué 'Caravan' 2017 $33.99: The last few vintages have not been kind to Chablis. Alice and Olivier have been hit by frosts and hail on a number of occasions, severely depleting harvests. To aid this tragedy and help make ends meet, they purchased grapes from fellow winegrowers/friends in the south of France, who farm using the same respectable methods. This 100% Viognier is vinified with the same steely, precision as their Chablis. All the floral, orchard fruit goodness you love in great Viognier wrapped up in a tight package. A crunchy, fresh, acid driven Southern white.
