Last Friday, David McCarus invited me to taste and chat with him over Zoom. We discussed our careers, what led me to open Monarch, and of course wine. It was a lot of fun!
We chose three wines to taste. All from France and all with a singular bead of commonality that runs through them.

A blend of 50% Chardonnay and 50% Pinot Noir, all grown on the same plot in the southern most point in Champagne. Biodynamically grown on chalk and clay soils. Fermented using indigenous yeasts in barrel. One of the most delicious and unique champagnes I've tasted. Brisk, taut and full of energy the wine displays citrus, apple skin, ginger and toast. Incredible minerality and fresh acidity lift a dense and concentrated palate. An all time favorite Champagne.
Pattes Loup 'Mise Tardive' Chabils 2017 $44.99
Classically styled Chablis, aged in used oak barrels. Bright, angular and speaks directly of its place. Lemon peel, salt and oyster shell aromas pour out of the glass. The palate is crisp and linear with wonderful texture and depth. The finish seems to last forever. An additional year of age (compared to most village-level Chablis) really allows the wine to fully express itself. Charleston's perfect white wine.
Domaine de la Cras, Coteaux du Dijon 2018 $39.99
A fresh, bright and oh so drinkable Pinot Noir from Burgundy's youngest appellation, Coteaux de Dijon. Unlike his more serious neighbors, Marc Soyard makes this in a fresh, crunchy, easy drinking style. Yet, he doesn't lose the elegance, nuance and depth that makes this hallowed ground for Pinot Noir. Raspberries and blackberries coupled with tea, spice and earth. A lip smacking Burgundy for any night.
