What sets good wine apart from great? It's a confluence of factors, but the most important element for me is elegance. Elegance is hard to describe, as it's obviously not a specific flavor or scent. Wines with elegance aren't big, brash or in your face. They aren't obvious. Instead of coming at you, wines of elegance draw you in. They are beguiling, revealing themselves subtly over time. 

Nothing epitomizes elegance like the wines of Burgundy, and today's Chardonnay and Pinot Noir from Paul Pillot are some of the finest examples. Simply put, they are Burgundian elegance at its' very best.

Domaine Paul Pillot was founded in 1900 by Jean-Baptiste Pillot, a barrel maker by trade who decided to start making his own wine. After World War I ended, his two sons, Henri and Alphonse, starting running the original estate and later acquired even more vineyards. 

Today, the domaine owns 13 hectares, around five of which are red. It is run by Henri's grandson Thierry, who began working in 1999, taking over full-time in 2004. Thierry is the 4th generation to take on the reins of this storied property.  

Under Thierry the focus has shifted to the vineyards. Farming is primarily organic and in the cellar he is decidedly hands off, dialing back the use of new oak and fermenting only with indigenous yeast. The results are wines of supreme finesse and purity. They reflect the hallowed terroirs of Burgundy perfectly. 
Bourgogne Blanc 2018 $44.99
 
From 35 year old vines, almost half of which come from the village of Chassagne-Montrachet. Fermented with indigenous yeasts and aged for a year in 350ml oak barrels, 10% new. It's then racked into stainless steel for an additional 6 months before bottling.  

A crystal clear nose of lemon rind, granny smith apple, white flowers and flinty reduction. The palate is taut and precise yet juicy and succulent. A deeply mineral finish. The best Bourgogne Blanc we've tasted from 2018. 
Chassagne-Montrachet 'Vieilles Vignes' 2018 $59.99

All fruit sourced from a single plot that sits directly next to the 1er Cru vineyard of Morgeot. 50 year old vines. Fermented with indigenous yeast using 50% whole cluster and aged in 10% new oak barrels. Bottled unfined and unfiltered. 

Aromas of dark berries, plum, earth, spice and a touch of pepper. The palate is incredibly silky and subtle yet fairly robust, offering great texture and detail. This is the Vosne-Romanée of the Côte de Beaune. A Pinot lover's dream.
