DAY 3: CHABLIS!
Chablis is a region unlike any other. Located closer to Champagne than the rest of Burgundy, its cool northerly climate and limestone soils convey chardonnay like no other site on earth.
Brothers Didier and Pascal Picq have managed their humble domaine since 1976. Their vines are tucked into the tiny, quiet village of Chichée, just southeast of the center of Chablis. The wines are naturally fermented with indigenous yeasts and raised in stainless steel tanks to protect the underlying expressions of terroir. You won't find a single stave of wood in the entire winery! The chalky white soils, made up of decomposed seashells, give this wine remarkable texture not found in any other expression of chardonnay. Couple an intense minerality with steely green fruit, lemon, flowers and honey and you've got yourself maybe the worlds most perfect white wine!
